The use of additives is a common practice in the food sector to increase its shelf life and/or make products more appealing. The use of synthetic additives is however increasingly limited. To enable the industrial production of natural ingredients, the project foresees the development of solutions that address weaknesses in the production chain, namely:

  1. (a) sustained production of natural sources rich in compounds of interest and the use of bio-waste;
  2. b) optimization of extraction methodologies, seeking efficiency and ease of scale-up;
  3. c) development of itist and efficient extraction/refining equipment;
  4. (d) development/application of stabilisation techniques to increase durability, processing compatibility and effectiveness in final products;
  5. e) optimization of incorporation methodologies in target products.

The project will also address aspects related to aromas and conservation of natural matrices using innovative methodologies. The working structure is as follows: PPS1. Project Management, PPS3.
